Grilled zucchini with sesame and chilli

This is a deliciously moreish side for Asian-style dishes and so quick and easy to whip up if you feel like you need to increase the vege content of a meal.

Ingredients

4 largeZucchini, thickly angle-sliced
1 cloveGarlic, crushed
1 TbspSesame oil
½ tspChilli flakes, or cayenne pepper
1 TbspSesame seeds, toasted

Directions

  1. Grill zucchini over a medium heat until lightly charred and slightly softened (about 3 minutes each side). Transfer to a serving platter.
  2. Mix garlic, sesame oil, chilli flakes, salt and pepper. Toss through zucchini, sprinkle with sesame seeds and serve warm or at room temperature.
